1. It’s a house, not a bar.
Bars are for standing and leaving. A sool jib is for sitting and staying. In Seoul it is where the workday properly ends: a low table, a grill or a griddle somewhere, bottles that arrive for the table rather than the person, and food that keeps coming because someone said “one more.” The Los Angeles cousin is the pojangmacha (tent bar); the modern version — ours — keeps the warmth and loses the tent.
2. Anju is not optional.
Anju (안주) is food eaten with alcohol — and in a sool jib it is the point, not the side. Jeon (savory pancakes), jjim (steamed dishes like gyeran-jjim), fried chicken, galbi, pickles and soups all count. The rule of thumb: every bottle on the table should have a plate to answer to.
3. The sool.
Makgeolli (막걸리) — milky, lightly sparkling rice wine, 6–8%, served cold and shared from a bowl or a bottle. Nasung, brewed in Los Angeles, is the one we pour first. Soju (소주) — the clear spirit, 16–24%, poured in small glasses and finished in one motion. Cheongju / yakju (청주 · 약주) — the clear, refined rice wines, closer to sake. Somaek (소맥) — soju dropped into beer at the 7:3 standard: seven parts Terra or Cass, three parts soju, tapped once, never stirred.
4. The etiquette.
Never pour your own.
Someone at the table pours for you; you pour for them. Watch the glasses, not your phone.
Two hands.
Receive with two hands; pour with two hands — or one hand on the bottle and the other lightly on your arm. Costs nothing, means everything.
Turn a little.
When drinking with someone senior, turn your head slightly away for the first sip. Nobody will mention it. Everyone will notice.
Rounds have names.
1차 (il-cha) is dinner. 2차 (i-cha) is the sool jib. 3차 exists. The cheers index rises accordingly.

“Geonbae!” (건배) — dry glass. “Jjan!” (짠) — the sound the glasses make. Either works. Both are better with anju.
5. Where to find one in Los Angeles.
